This past week several people have done very nice things for me. First was Karen, you may remember her from Monday’s post when she drove my too-big-for-the-Element grill home for me. Next up, two different people have given us freshly caught fish. Monday’s dinner was courtesy of our neighbor who one day asked if I would like some freshly caught mahi-mahi. Yes, please.
He brought over a big package of expertly filleted, beautifully fresh fish. Dinner that night was pan roasted mahi-mahi in a bit of butter and lemon, with some capers. It was served over spaghetti with pesto, which I conveniently made while waiting on hold. (I firmly believe that is why both speakerphone and hold music were invented… to enable me to cook and be on the phone simultaneously.) In an effort to not eat exclusively butter and carbs, we had some roasted broccoli and asparagus, too.
Dessert was a pound cake baked by my mother (I wasn’t on hold that long), topped with sauteed apricots and blueberries. I am pretty sure you can cook any fruit in butter and brown sugar and toss it over pound cake and it would be good. I will have to experiment with that a bit more.
Yesterday, FKGuy came home from work with a bag full of freshly caught yellow eye snapper. Although not the normal take-home from a law office, it was a welcome addition to our dinner table. Last night’s feast included salad with perfectly ripe avocado, balsamic and olive oil that we schlepped back from Croatia. It was followed by yellow eye snapper roasted and topped with pesto (left over from Monday, still outstanding) and tomatoes, and served with quinoa with sauteed mushrooms and Pecorino and roasted yellow squash also topped with Pecorino. There is very little in life that can’t be enhanced by a sprinkle of good cheese.
Dessert was ice cream sandwiches: Haagen Dazs dark chocolate between two freshly baked chocolate, white chocolate and Heath bar cookies. Life does not get much better than that.
I apologize for the lack of photos, but I was overly focused first on the meal preparation and then on the meal consumption. I’ll try for some good food porn next time.

As a participant in the second meal mentioned I have to reiterate that there is nothing like home made ice cream sadndwiches.
Yeah, I have this allergy so it would be difficult to make this happen. Will try out a variation though!
Nice twist on the common recipe! Mind if I take some inspiration from this? 😉
