I love making brownies. They are easy to eat, everyone loves them and most importantly, they are easy to make! As many people have dietary restrictions, and I am trying desperately to lose those last few annoying pounds, I have come up with a recipe that is delicious, and works for just about everyone. Brownies for all. They are chocolate-y and rich, and by no means can be construed as “diet food”. Sadly, they were gone before I had time to snap a photo.
Several people have already asked me for the recipe, and I am happy to share it with you. This will work for gluten free folks, dairy free, and soy free. If you can’t have nuts, you can try subbing coconut flour for the almond meal, but I make no promises as to how it will turn out, as I have not tried that yet. (If you try it, let me now how it works, please.)
Brownies for All
Ingredients
5 eggs
1 cup coconut sugar
2 ounces maple syrup
1 cup almond meal or almond flour
2/3 cup cocoa powder
2 ounces coconut oil
2 teaspoons vanilla
3/4 cup chocolate chips, melted
Preheat oven to 325 degrees.
Butter or spray or line with parchment paper (my choice) an 8 x 8 inch pan. Whisk the eggs in a stand mixer until fluffy. Add sugar and syrup and mix until combined. Add all the other ingredients and mix until combined.
Bake for approximately 30 minutes until a toothpick inserted in the center comes out clean.
Feel free to add mix ins: pecans, chocolate chips (because, really, you can never have too many), dried cherries.
